This recipe is great for a big family breakfast, especially on a cold morning. It starts the day off right with a delicious, Whole30 approved meal that’s colorful, fresh and will make everyone want seconds.
Sweet Potato and Bison Hash

Ingredients
- 1 pound Teton Waters Ranch ground bison
- 4 teaspoons ghee clarified butter
- 1 sweet potato cut into small cubes
- 1 cup white onion diced
- 1 green bell pepper diced
- 1 red bell pepper diced
- 1 yellow bell pepper diced
- 2 teaspoons chili powder
- ½ teaspoon cumin
- 1 teaspoon turmeric
- 2 teaspoons garlic powder
- 2 teaspoons sea salt
- 2 teaspoons cracked black pepper
- 6 cage-free eggs
- 3 tablespoons green onions thinly sliced, for garnish
Instructions
- Put the ghee in a sauté pan on medium heat. Add the sweet potatoes, and cook for 5 minutes, stirring frequently. Add the onion, all the bell peppers and cook for 3 more minutes, stirring frequently.
- Next, add the bison and all of the seasonings. Cook for an additional 10 minutes, stirring frequently until the bison is cooked through.
- Crack each egg carefully around the pan on top of the hash mix. Cover and cook for 5 minutes or until eggs are set.
- Place a scoop of the hash containing an egg onto each of six plates, and sprinkle the green onion rings on top for a beautiful color pop. Enjoy!
