  • 4 teaspoons ghee clarified butter
  • 1 sweet potato cut into small cubes
  • 1 cup white onion diced
  • 1 green bell pepper diced
  • 1 red bell pepper diced
  • 1 yellow bell pepper diced
  • 2 teaspoons chili powder
  • ½ teaspoon cumin

  • 2 teaspoons sea salt
  • 2 teaspoons cracked black pepper
  • 6 cage-free eggs

  • Put the ghee in a sauté pan on medium heat. Add the sweet potatoes, and cook for 5 minutes, stirring frequently. Add the onion, all the bell peppers and cook for 3 more minutes, stirring frequently.
  • Next, add the bison and all of the seasonings. Cook for an additional 10 minutes, stirring frequently until the bison is cooked through.
  • Crack each egg carefully around the pan on top of the hash mix. Cover and cook for 5 minutes or until eggs are set.
