Who doesn’t love bacon? This delicious take on the hotdog brings a little fun to an already fun meal. The mango salsa takes it up a notch. This recipe is keto and paleo friendly.
Bacon Wrapped Hotdogs in Lettuce Cups

Ingredients
- 4 Teton Waters Ranch Hot Dogs
- 8 leaves butter or romaine lettuce
- 4 slices bacon
- 2 Roma tomatoes diced
- 1 small red onion sliced
- 1 small mango peeled and diced
- 1 serrano pepper diced and de-seeded
- 1 bunch cilantro leaves plucked and gently chopped
- Salt and pepper to taste
- 1 avocado quartered and thinly sliced
Instructions
- Preheat the oven to 375 degrees F.
- Remove leaves from the head of lettuce, rinse and spin dry or dry on paper towels.
- Meanwhile, roll each hotdog in a slice of bacon and place on a baking sheet. Bake for 15 to 20 minutes, until the bacon is cooked and browned to your desired color (we like ours extra crispy).
- Next, prepare the salsa. Put the tomatoes, onion, mango, serrano and cilantro in a small bowl. Salt and pepper, to taste.
- To build the hotdogs, make a boat with 2 lettuce leaves on a plate. Set the bacon-wrapped hotdog in the boat and top with desired amount of salsa. Finish with avocado slices and enjoy!
