4large carrotspeeled and cut into ¼-inch-thick rounds
3large zucchiniscut into ¼-inch-thick rounds
1small yellow onioncut to same size as carrots/zucchinis
2sprigs of rosemary
Instructions
Preheat the oven to 375 degrees F.
In a large bowl, toss all the cut vegetables in 1 tablespoon of oil and sprinkle with 1 tablespoon each of salt and pepper. Add the sprigs of rosemary. Place in a glass casserole dish, and bake for 10 minutes.
Remove the dish from the oven. Add the bison brats, and bake for 5 more minutes. Once it’s hot throughout, enjoy!
