Instructions
Heat a skillet over medium. Add sausage patties and cook 2-3 minutes per side, until browned and heated through. Remove and keep warm.
Split and toast English muffins or buns until golden. Lightly butter if desired.
Lower heat to medium-low. Add butter or oil to the skillet. Crack eggs into the pan and cook gently until whites are set but yolks remain soft, about 3–4 minutes. Season with salt and pepper. (For slightly more set whites, cover the pan for 30 seconds.)
Layer sausage patty on the bottom bun, top with cheese (if using), then carefully place the runny egg on top. Add greens or avocado if desired. Finish with the top bun.
