Preheat the grill to medium heat.
Place kielbasa, Polish sausage, and hot dogs on the grill. Cook for about 6–8 minutes, turning occasionally, until heated through with light grill marks.
Remove from grill and slice the kielbasa and Polish sausage into thick coins or diagonal pieces. Leave hot dogs whole or cut into thirds.
On a large wooden board or platter, arrange the grilled sausages in the center while still warm.
Fan out slices of cheese and place crackers or baguette slices around the board.
Add grapes, cherry tomatoes, cucumber slices, bell peppers, and snap peas to bring color and freshness.
Place small bowls of mustard, honey, and pickles around the board for dipping.
