Heat a large skillet over medium heat. Cook the breakfast sausage patties for about 3–4 minutes per side until browned and cooked through. Remove 4 from the pan and set aside, keeping them warm. Roughly chop or crumble the other 4 into bite-size pieces for the gravy, set aside.
In the same skillet, add butter. Once melted, sprinkle in the flour and whisk constantly for about 1–2 minutes to form a light golden paste.
Slowly whisk in the milk, stirring continuously to prevent lumps. Bring to a gentle simmer and cook 3–5 minutes until the gravy thickens.
Stir in garlic powder, onion powder, black pepper, and salt to taste. Return the chopped sausage to the skillet and stir to combine.
Split warm biscuits onto plates and generously spoon the sausage gravy over the top, then add a patty on top of each biscuit. Serve hot. Garnish with parsley or chives if desired.
