Put the ghee in a sauté pan on medium heat. Add the sweet potatoes, and cook for 5 minutes, stirring frequently. Add the onion, all the bell peppers and cook for 3 more minutes, stirring frequently.
Next, add the bison and all of the seasonings. Cook for an additional 10 minutes, stirring frequently until the bison is cooked through.
Crack each egg carefully around the pan on top of the hash mix. Cover and cook for 5 minutes or until eggs are set.
Place a scoop of the hash containing an egg onto each of six plates, and sprinkle the green onion rings on top for a beautiful color pop. Enjoy!
